Saten Chardonnay

Atto the eye it has a bright straw yellow color with golden reflections. Hints of bread crust and yeast emerge on the nose, accompanied by delicate notes of citrus and dried fruits such as almonds and hazelnuts. In the mouth it is fresh, harmonious, with subtle and persistent bubbles that give the wine vitality

Grapes: 100% Pinot Blanc Vineyards of origin: The grapes come solely from the Mirabella vineyard, located in Paderno Franciacorta Soil: Fluvio-glacial Vineyard planting: Sylvoz at 3,000 vines/ha Average age of vines: 41 years Yield: No more than 70 q.li/ha Harvest: Manual, only of healthy bunches at perfect ripening harvested in small perforated crates Harvest time: First half of August Vinification: Soft pressing with very low yields (50%) and use of only the flower must. Fermentation with selected yeasts at a controlled temperature of 16- 18 °C, 90% in cement tanks and 10% in barriques of oak of several passages Reserve wines: Only base wines from the vintage year Drawing: In the spring following the harvest Aging: A minimum of 24 months on the lees in the bottle and at least 3 months after disgorgement Dosage: Brut Nature, without any added sugars but only topping up with the same wine Color: Straw yellow with greenish reflections Bouquet: Sensations of white flowers and tropical fruit, supported by a balsamic note of wild herbs Taste: Delicate and elegantly savory, well balanced between acidity and softness, the sensations of white flowers accompanied by notes of pastry

Wine of clean, assertive character. Medium bubble. Suitable with cured meats and aged cheeses.

Direct citrusy wine with hints of dried fruit. Excellent as an aperitif to cured meats and soft, medium-aged cheeses.
