ripening harvested in small perforated crates
Harvest time: First half of August, starting with
from the Pinot Blanc, continuing with the Pinot Noir and
ending with the Chardonnay
Vinification: Mashing within 3 hours of the
grape harvest, separate pressing of the three grape varieties with
limited yields (50%) and use of the flower must only.
Maceration of 18-24 hours of the Pinot Noir for
color extraction. Fermentation with yeasts
selected yeasts at a controlled temperature of 16-18 °C, in
cement tanks
Reserve wines: Only base wines from the vintage year
Drawing: In the spring following the harvest
Aging: A minimum of 70 months on the lees in the bottle and
at least 6 months after disgorgement
Dosage: Brut Nature, without any added
sugars but only topping up with the same wine
Color: Intense powder pink with slight antique gold reflection
Bouquet: A heady set of sensations that
recall toasted, pink grapefruit and brioche bread,
with an undercurrent of eucalyptus and almond shell
Taste: Notes of blood orange, white flowers and pastry
freshly baked savory. Fresh, savory and elegant but at the
at the same time powerful and persistent
